Squash/Zuchinni Bake RECIPE

My husband wanted pasta and I was out of my YELLOWS. All my fellow 21 Day Fixers feel my pain. Yellows on the 21 Day Fix meal plan are complex carbs = EVERYTHING YUMMY. I did however have 1 BLUE (dairy) 2 Green (veggies) and 1 teaspoon (oil) left. SOOOO I whipped this up! 

It was super easy and simple.

WHAT YOU NEED: 

1 Squash
Casserole dish
1 tablespoon Olive Oil 
1/2 cup Cheese (I used mozzarella)
1 clove of minced Garlic
1 tablespoon of Green onion
1.5 teaspoon of your choice spice (I used rosemary)

HOW TO MAKE:

1. Cut up the squash in half moon pieces. 
2. Cut green onion.
3. Throw in a casserole dish together, add in olive oil, minced garlic, rosemary and a tablespoon of cheese.
4. Top with remaining cheese and bake for 20 minutes at 350 degrees. For the last 3-5 minutes I like to turn the broiler on to brown the top of the cheese.

Super simple and yummy. You could add pepper, zucchini, onion and so many other options. This is just what I had on hand.
